We recommend pairing Mercado Famous Lomo 50% Iberico with medium-bodied red wines, fino sherries, fresh baguettes, and honeydew. Lomo 50% Iberico slices are made from the tenderloin of a cross between 100% Ibérico and the 100% Duroc breed, and cured for 70 days. Our product comes from a century old family farm in Salamanca, Spain. Our pigs roam free across a protected reservation of meadow and forrest, and are fed on acorns, natural pastures and other organic foods. We believe happy pigs = happy meats. Lomo 50% Iberico comes pre sliced, vacuum sealed and ready to eat. It is shelf stable, and does not require refrigeration util opened.
